Blueberry Cornbread

BLUEBERRY CORNBREAD

Cast Iron

1 box jiffy mix
1 egg
1/3 cup milk

Make cornbread mix according to directions.

Add 1 cup blueberries. (could be frozen)
2 T sugar
1 tsp vanilla

Melt 1T butter in cast iron skillet.
pour in batter.
sprinkle cinnamon and sugar generously on top before baking.
Bake according to package directions.

Cut into wedges to serve.  Top with maple syrup. Eat with a fork!
